Qdoba Mexican Eats has officially opened a new restaurant along Montgomery Highway, marking another expansion in the Birmingham metro area.
New Hoover location brings fast-casual Mexican favorites
The new Qdoba sits at 1539 Montgomery Highway near Lorna Road in Hoover, between Hoover and Vestavia Hills.
The restaurant is led by general manager Hari Vajaha, who has lived in Hoover for about a decade. Vajaha and his family moved to the area years ago and now hope to bring fresh Mexican flavors to their local community.
This marks the second Qdoba location in the Birmingham metro and the fourth across Alabama.
What you’ll find on the Qdoba menu
Qdoba Mexican Eats is known for customizable meals and quick service. Guests can build their own burritos, tacos and bowls using a wide range of ingredients.
Popular menu items include street-style tacos, chicken protein bowls and the QuesaBirria quesadilla. Customers can also add freshly made guacamole and other toppings to personalize their meals.
The brand focuses on fast-casual dining that blends convenience with fresh ingredients and flexible menu options.
Qdoba continues expanding in Birmingham
The Hoover restaurant follows another recent local opening for the chain. In late 2024, Qdoba launched its first Birmingham-area location near the University of Alabama at Birmingham Medical District.
With the new Hoover spot now open, residents on the south side of the metro area have an additional place to grab quick Mexican-inspired meals.
The restaurant operates daily from 10:30 a.m. to 10 p.m. and welcomes guests looking for fast, customizable lunch or dinner options.
