Local favorite Roll Cajun Boudin opened its first brick-and-mortar restaurant in Birmingham on Mardi Gras, Tuesday, February 17.
The restaurant occupies the former Iron City Grill space at 2208 6th Ave S and serves authentic Cajun dishes from founder Matt Coltrin, a native of Louisiana’s Acadiana region.
From Food Truck to Brick & Mortar
Matt Coltrin started Roll Cajun Boudin as a food truck in March 2024 after retiring from the U.S. Air Force. He sold homemade boudin, King Cakes, and other Cajun specialties, quickly building a loyal following. The food truck gained regional attention after serving 400 pounds of shrimp, jambalaya, and King Cakes at the Anniston Jazz and Art Festival.
Seeing strong demand, Coltrin transitioned to a permanent location in the former Iron City Grill space. He renovated the interior while keeping familiar features like the 75-foot bar, adding Cajun-themed decor, murals, and memorabilia to create a vibrant dining experience.
Menu Highlights and Unique Offerings
Roll Cajun Boudin serves a rotating menu of authentic Cajun fare. Popular dishes include:
Chicken Boudin Egg Roll (top seller)
Whole smoked alligator (occasionally)
Crawfish boils during crawfish season, sourced from Breaux Bridge, Louisiana
The restaurant also offers a small grocery section featuring ready-to-cook items like frozen, deboned chicken stuffed with boudin crawfish étouffée. Hours are Sunday–Monday 10AM–10PM, closed Tuesday, and Wednesday–Saturday 8AM–1AM, with a cappuccino and espresso bar in the morning.
Bringing Cajun Culture to Birmingham
Coltrin emphasized authenticity in every dish, drawing from his Acadiana heritage. He aimed to deliver an experience that captured the flavors, aromas, and culture of Louisiana Cajun cuisine. The restaurant opened to a warm reception, with Coltrin highlighting the role of his dedicated staff in creating a welcoming atmosphere for all visitors.
