Redemption by Straight Mountain Foods has officially opened its doors in Trussville, bringing the food truck’s popular comfort food to a permanent location.
From Food Truck Favorite to Full-Service Restaurant
Straight Mountain Foods announced plans for the restaurant in March 2026 after building a loyal following through its food truck and catering business. The new restaurant is located at 8885 Gadsden Highway in Trussville and offers many of the dishes that made the business popular across the Birmingham area.
Guests can enjoy favorites such as burgers, wings, brisket, loaded potato salad, and smoked macaroni and cheese. The menu also features rotating chef-inspired creations alongside classic Southern comfort food.
The Story Behind the Name
Owner Colt Reese chose the name “Redemption” to reflect the company’s journey. The business previously faced major setbacks, including the closure of its first restaurant because of personal circumstances. A few years later, a fire destroyed the company’s food truck.
Despite those challenges, Straight Mountain Foods continued to grow with support from the local community. Customers kept booking catering events, visiting the food truck, and recommending the business to others. Reese credits that support for helping make the new restaurant possible.
What to Expect When You Visit
Redemption serves comfort food throughout the week, including meat-and-three lunch specials and creative dinner selections. The restaurant plans to offer rotating chef specials in addition to its signature barbecue and comfort food favorites.
Recent featured dishes have included Red Snapper Oscar served with vegetables and a 10-ounce porterhouse pork chop paired with garlic Parmesan mashed potatoes and brown butter-glazed carrots.
The restaurant is located at 8885 Gadsden Highway, Trussville, AL 35173. It is open Monday through Friday from 11 a.m. to 8 p.m., Saturday from 7 a.m. to 8 p.m., and Sunday from 7 a.m. to 3 p.m.
