Bandit Pâtisserie founder sells bakery

A well-known Birmingham bakery is entering a new chapter as its founder transitions ownership while continuing to expand other culinary ventures in the city.

Bandit Pâtisserie Announces New Ownership Transition

Bandit Pâtisserie has officially been sold by founder Kristen Hall to longtime co-owner Lacy Triplett. The bakery began in 2013 as a small passion project and grew into a popular Birmingham pastry destination over the past decade.

 

The business evolved from neighborhood pop-ups and market sales into a full brick-and-mortar bakery, first opening in Homewood before relocating to its current downtown Birmingham location. It became known for its handcrafted pastries, including croissants, tarts, danishes, macarons, and breads.

 

Hall said the transition reflects trust in Triplett’s leadership and continued commitment to quality and hospitality.

New Leadership Continues Daily Operations

Lacy Triplett, who joined the bakery in 2021, now leads day-to-day operations and production. She previously worked in law before shifting into pastry work and later becoming a co-owner in 2024.

 

Triplett has played a key role in managing kitchen operations and guiding the bakery’s production team. She emphasized that the staff remains central to the bakery’s identity, with a continued focus on craftsmanship and customer experience.

 

The bakery will continue operating with the same core menu and dedication to artisan baking under its new ownership structure.

Founder Shifts Focus to La Fête and Future Projects

Kristen Hall will now focus on her French bistro concept La Fête and other upcoming culinary projects in Birmingham. The restaurant has gained attention for its refined approach to French-inspired dining and hospitality.

 

Hall’s work at La Fête has earned national recognition, including industry awards and accolades for culinary excellence. She has expressed interest in building a dining experience centered on hospitality, atmosphere, and memorable guest experiences.

 

With Bandit Pâtisserie transitioning to new ownership, Hall continues expanding her influence in Birmingham’s restaurant scene through her ongoing projects.
